In many Kenyan schools, especially girls’ schools, ensuring consistent access to nutritious meals is a challenge. With rising food costs and supply chain disruptions, school chefs often struggle to provide balanced meals with limited resources. To address this, we launched the Long Shelf Life Vegetables and Porridge Infused with Herbs Culinary Training Program that was designed to equip school chefs with innovative cooking techniques that enhance nutrition, flavor and food preservation.

WHAT THIS TRAINING COVERED:

This hands-on training program focuses on two major aspects:

Long Shelf Life Vegetables – Techniques to extend the usability of vegetables through dehydration, fermentation, and natural preservation methods. This ensures that schools can stockpile nutritious vegetables, reducing dependency on seasonal availability.

Herbal-Infused Porridge – Blending porridge with locally available herbs and superfoods to boost students’ immunity, cognitive function and overall well-being. Participants learned how to incorporate nutrient-rich herbs like moringa, ginger, lemongrass and turmeric into porridge preparation.
